Healthy Homemade Mayo

Homemade Mayo




You probably think that you need to be experienced chef to make homemade mayo, and you would be mistaken.  It is simply 3 main ingredients, spice to taste, and 30 minutes of your time. Oh yea one basic kitchen appliance.

Homemade mayo is less heavy, richer, fluffier, and has an overall better taste. It can even be used for dips!  Merely, change some of the spices and you will get a different dip every time.  For instance, I like homemade tartar sauce, chives-garlic mayo, and even curry-pineapple dip.



Ingredients:

1 organic egg
2 tablespoons of rice wine vinegar
1.5 cups of light tasting olive oil
Key Spices: salt, pepper and mustard powder (0.5 teaspoon of each)

*It is very important that all the ingredients are at room temperature, if they are too hot or cold it could cause the mayo to spate or not emulsify.


Instructions:

1.    Place the egg, 2 tablespoons of rice wine vinegar, salt, pepper and mustard in a mixing bowl, blender, or food processor. Mix thoroughly,
2.    While the mixer, blender or food processor is running, slowly drip the olive oil into the mixture.  As it starts to emulsify the oil drip can become a drizzle until you used up all 1.5 cups.
3.    After the mayo starts to thicken to a creamy texture take, turn off your mixer, and move the mayo to your refrigerator. 
4.    After about an hour you’re ready to enjoy.  I typically store my mayo in the refrigerator for about a weak max, but it never lasts that long, because it is so delicious.


Homemade mayonnaise is not filled with preservatives, chemicals or high processed soybean or vegetable oils. Your homemade mayo is packed with protein, and healthy and essential fats.  Simply, it just tastes incredible!



Tatar Sauce: 
It a perfect combination with seafood
1 Tablespoon minced cornichons or dill pickle • 2 Tablespoon fresh parsley leaves, minced • 2 teaspoon minced capers • 2 teaspoon minced chives (fresh) or dill if you prefer that more • ½ Tablespoon lemon juice • 1 teaspoon pickle juice • salt and ground black pepper. Place all ingredients in a bowl and mix until blended and add then 1.5 cups of your homemade mayo

Chives-Garlic Mayo:
Great with steak, or baked potatoes or roasted vegetables
1 cup finely chopped fresh chives • 1 garlic clove, minced • 1/4 teaspoon salt  • 1/8 teaspoon cayenne • 3/4 cup Olive Oil Mayo. Place all ingredients in a bowl and stir thoroughly to combine.

Curry-Pineapple Mayo:
Delicious with grilled chicken or pork
1 garlic clove, minced • 1/8 teaspoon salt  • 1/8 teaspoon cayenne • ½ teaspoon curry powder • 0.5 cup fresh pineapple. Place the pineapple in the mixer, it should be chucky and get rid of the juice otherwise your mayo will be too watery add • 3/4 cup Olive Oil Mayo. Place all ingredients in a bowl and stir thoroughly to combine.
